Paneer Makhani

Paneer Makhani
Paneer Makhani
This dish does not need any introduction in India.Any Punjabi/North Indian or Mughlai restaurant would serve this dish. The rich texture is surely not for the heart patients or the people who are in diet. The combination of cheese, butter and cream will surely take you to heaven with every bite of it! So don't think and loose yourself in this buttery creamy gravyMy friends and family love this dish prepared by me.So I am sharing my way of doing this.

Ingredients:

  1. Paneer - 200 gms cut into small cubes
  2. Tomatoes - 5 chopped
  3. Cashew nuts - 20
  4. Cumin seeds - 1 tsp
  5. Cloves - 5-6
  6. Cardamom - 2
  7. Cinnamon - 1"
  8. ginger - 2 tsp
  9. turmeric powder - 1 tsp
  10. chilly powder - 1 tsp
  11. Garam Masala powder - 2 tsp
  12. Kasuri Methi dried - 1 tbsp
  13. Fresh cream - 1/4 cup
  14. Butter - 3 tbsp
  15. salt and sugar to taste

Method:
Immerse the paneer pieces in warm salt water till you are done with the gravy.

Heat 1 tbsp butter in a skillet.Add cumin seeds. When the splutter, add the whole garam spices and cashew nuts.Fry the cashews till they are little golden brown in color.

Add the chopped tomatoes in it.Add little salt and ginger paste.Fry till the tomatoes are little mushy.
Then add turmeric powder and chilly powder.Fry for 1 more min.

Let it cool down and then grind it smooth in a blender.

Now in the same skillet, add this mixture.Add 2 cups of water and salt.Let it boil. Then add 2 tbsp butter and simmer it to low flame.Cover and cook for 30 mins.Stir occasionally in between.

Add the paneer pieces, garam masala powder, kasuri methi leaves and sugar.Cover and let it cook for another 5 mins.

Then switch off the flame and add the cream.Mix well.Do not cook further after adding the cream as it may get curdled.

Serve hot with butter naan/kulcha or chapathi.
