Paneer Makhani |
Ingredients:
- Paneer - 200 gms cut into small cubes
- Tomatoes - 5 chopped
- Cashew nuts - 20
- Cumin seeds - 1 tsp
- Cloves - 5-6
- Cardamom - 2
- Cinnamon - 1"
- ginger - 2 tsp
- turmeric powder - 1 tsp
- chilly powder - 1 tsp
- Garam Masala powder - 2 tsp
- Kasuri Methi dried - 1 tbsp
- Fresh cream - 1/4 cup
- Butter - 3 tbsp
- salt and sugar to taste
Method:
Heat 1 tbsp butter in a skillet.Add cumin seeds.When the splutter, add the whole garam spices and cashew nuts.Fry the cashews till they are little golden brown in color.
Add the chopped tomatoes in it.Add little salt and ginger paste.Fry till the tomatoes are little mushy.
Then add turmeric powder and chilly powder.Fry for 1 more min.
Let it cool down and then grind it smooth in a blender.
Now in the same skillet, add this mixture.Add 2 cups of water and salt.Let it boil.Then add 2 tbsp butter and simmer it to low flame.Cover and cook for 30 mins.Stir occasionally in between.
Add the paneer pieces,garam masala powder,kasuri methi leaves and sugar.Cover and let it cook for another 5 mins.
Then switch off the flame and add the cream.Mix well.Do not cook further after adding the cream as it may get curdled.
Serve hot with butter naan/kulcha or chapathi.

Its a rich dish but I don't mind, not always but certainly the flavors are so good. Creamy and thick and just a superb curry for rice.
