Kadai Paneer |
Ingredients:
- Paneer - 200 gm
- Onion - 1 large finely chopped
- Tomatoes - 3 (puree 2 1/2 tomatoes and cut rest 1/2 tomato into 4 pieces)
- Capsicum - 1 cut into big cubes
- ginger paste - 1 tsp
- garlic paste - 1 tsp
- green chilly - 4 slit
- cardamom - 2
- cinnamon - 1"
- cloves - 4-5
- kasuri methi - 1 tbsp
- turmeric powder - 1 tsp
- garam masala powder - 1 tsp
- salt and sugar to taste
- mustard oil/ refined oil - 2 tbsp
- cumin seed - 1 tsp
- coriander seed - 1 tsp
- pepper corns - 10
- fenugreek seed - 1/4 tsp
- Red chilly - 2
Method:
Cut the paneer into cubes and soak in warm salt water till you prepare the gravy.
Dry roast all the ingredients for kadai paneer masala and then coarsely grind them.keep the masala aside.
Heat oil in a kadai. Normally paneer dishes taste very good with mustard oil.But you can use refined oil as well.
Add whole spices (cardamom, cinnamon and cloves) and stir for 30 secs.
Then add the chopped onion,ginger and garlic paste.Add little salt and fry till onions turn brownish.
Add green chilly,capsicum and tomato pieces from 1/2 tomato.Stir well for another 4-5 mins.
Now add turmeric powder and the kadai paneer masala powder.Stir for 1 min.

Now add the tomato puree.Bring it to boil.Then add 1 cup of water and salt.When the gravy starts boiling then simmer the flame and cover with the lid.Let it cook for 15 mins.

Add kasuri methi,garam masala powder,sugar( 1tsp) and paneer. Cook for another 5 mins.
