We, the Bongs are famous for consuming potatoes.Most of the Bengali veg and even non veg recipes will include potato in its ingredient list.When it comes to only potatoes then undoubtedly Bong's favorite dish would me alu posto(potato cooked woth poppy seed). Alu posto, plain rice and dal is what every Bong desire in their daily lunch menu.It is quite easy to make.In my house it is a special favorite dish of my dad and husband.Specially I make it for them.Here I am sharing the recipe.
Ingredients:
Potatoes - 250 gms cut into small cubes
Poppy seed(posto) - 75 gm
Mustard oil - 2 tbsp + 1 tsp
Turmeric powder - 1 tsp
Chilly powder - 1 tsp
Green Chilly(optional) - 2 for gurnishing
Panch phoron - 1 tsp

For my non bengali friends, I want to give a brief description of panch phoron. For most of the bengali recipes we use panch phoron for tempering. It is an equal mix of cumin seed, fenugreek seed, nigella seed, black mastard seed and fennel seed.Instead of mustard seed, sometimes radhuni is also used.
Method:
Grind the poppy seed with little water in a mixer grinder.Peel the potatoes and cut them into cubes.

Heat 2 tbsp mustard oil in a pressure pan.Add 1 tsp of panch phoron and cook till the splutters.
Add the potatoes and fry for 5 mins in the oil.
Add turmeric and chilly powder.Mix well.Cook for 1 min.
Now add 1 cup of water and salt.Close the lid and pressure cook till the potatoes are well cooked.I had cooked till whistles came.
Now open the lid of the pressure cooker and add the grounded poppy seed.
Mix well and cook in high flame till the additional water evaporates.Remember this dish is not a gravy dish.It should be dry.
When the additional water evaporates switch off the flame and mix 1 tsp of mustard oil.It will give a strong and nice flavor of mustard in this dish.

Garnish with green chillies and serve with rice and dal.
