Corn Spinach Sandwich |
I am sharing the recipe here.
Ingredients:
- spinach - 2 bunches
- Onion - 1 finely chopped
- Tomato - 2 pureed
- Frozen corn - 1/2 cup
- Garlic chopped - 1 tbsp
- Green chilly - 2
- salt and sugar to taste
- Bread slices
Method:
Wash and clean the spinach.Chop them and add to boiled water along with salt.Boil for 5 mins without cover.Drain hot water and wash them under running cold water.This way the color of the spinach will retain.
Make a paste of spinach and green chilies.
Boil the corn in water with salt for 10 mins.I have done this step in microwave oven.
Now heat 1 tbsp oil and 1 tbsp butter.When the butter melts, add chopped onion and garlic.Fry them till the onions are golden brown.
Add tomato puree and corn.Fry them well till the oil oozes out.
Finally add spinach paste and salt and sugar.Stir well for 5 mins in medium flame.Do not add any water.It should be little thick in consistency and not runny.
Now put this mixture on top of a toasted bread and covered it with other.Cut diagonally.
Alternatively you can grill the sandwich if you want.
For extra taste you can put cheese on top.I have avoided it to make it healthy.
Serve it with a cup of tea.
